This delicious hot and sour soup is a wonderfully light and warming meal for winter.

25 mins, serves 4

4 cups vegetable broth
1/4 cup fresh ginger, sliced
1/4 to 1/2 tsp cayenne pepper
2 cups snow peas, trimmed
500g prawns, peeled and deveined
1 lemon, cut into wedges
2 tbs fresh coriander or parsley, chopped

Method

*Place broth and ginger in a large pot and cover, simmer over medium-high heat for 15 minutes
*Strain out ginger and return broth to pan
*Add cayenne pepper & snow peas, simmering covered for about 5 minutes
*Add prawns and cook until firm (about 3 minutes)
*Squeeze lemon wedges into individual soup bowls and garnish each with coriander/parsley.
