Christmas Recipe - Gingerbread Trifle

I recently dined at a pop up restaurant in Chiswick where they offered a set 5 course menu.
It was decadent, delicious and one of the best meals I've eaten in quite some time.
For dessert, they offered up a Christmas Trifle.
I'm not a huge fan of trifle, but this was amazing.
My fellow dining companions and I discussed how great it would be if there was such a thing as gingerbread trifle. And so a quick internet search revealed that yes, there is.

Vanilla Oats with Spice Stewed Apples

Serves 2


Vanilla Oats

1 cup oats

2 cups nut milk or coconut milk or water

1 tbs vanilla extract or 1 vanilla bean

Spiced Apple

2 large green apples peeled and cubed

1 cup water

1 tbs date paste

1/2 tsp cinnamon

1/2 tsp mixed spice

1/2 tsp nutmeg

Gingered Shrimp and Snow Pea Soup

This delicious hot and sour soup is a wonderfully light and warming meal for winter.

25 mins, serves 4

4 cups vegetable broth
1/4 cup fresh ginger, sliced
1/4 to 1/2 tsp cayenne pepper
2 cups snow peas, trimmed
500g prawns, peeled and deveined
1 lemon, cut into wedges
2 tbs fresh coriander or parsley, chopped


*Place broth and ginger in a large pot and cover, simmer over medium-high heat for 15 minutes
